Herbal Chicken Soup
One of the most recognizable breeds, the black chicken is known for its black skin and feathers. Nourishing and delicious, black chicken soup provides a wide range of health benefits.
Approximately 2 hours
- 1 whole silkie chicken
- 2 medium ginseng roots
- sliced ginger roots
- 20 jujubes
- 2 tablespoon of goji berries
- 1 tablespoon of salt or to taste
- water
- Cut the chicken into small pieces to your liking.
- Submerge the chicken in a pot of water, then bring it to a boil. Heating up the water and the chicken together helps bring out all the impurities so you can filter it out.
- Let the water boil for a couple of minutes. There should be impurities and foams floating on the surface of the water. Turn off the heat and discard this batch of water.
- Rise the chicken pieces to make remove any scum on the chicken. Rinse the pot to remove any additional scum stuck to the sides of the pot.
- Add the clean pieces of chicken to the clean pot, submerge it in water. Add sliced ginger, and ginseng roots. Bring the soup pot to a boil and simmer with lid on for approximately 1 hour.
- Add the jujubes and simmer for an additional 30 minutes.
- Add the goji berries into the soup pot. Season with salt to taste. The soup should not taste salty, and it should be slightly sweet. Simmer for another 15 minutes, remove from heat.
- Let it cool down before serving.
Stewed Sweet Bamboo Shoot with pork
Everyone’s favourite stew. This soy-braised pork with sweet, young bamboo shoots is an easy recipe packed with incredible flavours. It can be cooked on the stove, pressure cooker, or a slow cooker!
Approximately 1 hours
- 300g pork shoulder/butt cut into medium-size chunks
- 100g pork belly cut into medium-size chunks
- 100g young bamboo shoots
- Cooking oil
- Water
- 2 cloves of garlic (minced)
- Star anise
- Soy sauce
- Brown (or white) sugar
- 5 hard-boiled eggs (optional)
- Preheat about 1 tablespoon of oil in a large pot. Brown the meat in the pot until they have a nice brown.
- Remove the pork from the pot. Add another tablespoon of oil to the same pot and add in the minced garlic, star anise, sugar and soy sauce. Stir fry until the aroma arises for about 3 minutes. Make sure to scrape the bottom of the pot with a spatula.
- Add the pork, cut bamboo shoots, and hard-boiled eggs. Add water just until everything is submerged and season to taste. Bring it to a boil and then lower the heat and simmer until the pork is tender.
- Serve warm and garnish with coriander leaves if desired.
Ginger Mint Limenade
Ginger Mint Limenade made with Wild Forest Honey is a refreshing way to stay cool in the heat!
Approximately 5 minutes
- Ginger juice
- Lime slices
- Lime juice
- Honey
- Crushed mint leaves
- Cold water
- Ice cubes
Mix all the ingredients in a jar and serve. Best served cold.
Lime Juice
Limes are packed with flavor and health benefits!
Approximately 2 minutes
- Lime juice
- Sugar
- Water
- Ice
- Squeeze the lime juice into a jar.
- Add 3 tablespoon of sugar.
- Pour 500mL of water into the jar and stir. Add sugar if needed.
- Best served cold.
Avocado & Toast
Start your day right with a simple dish of avocado and toast topped with our fresh organic free-range eggs that contain zero antibiotics.
Approximately 15 minutes
- 1 ripe avocado
- 1/2 lemon (optional)
- 2 slices of your choice of bread
- Your choice of seasoning
- 1 organic free-range egg
Cut the avocado in half and carefully remove its seed. Then scoop out the flesh into a small bowl. Squeeze in the lemon juice then mash with a fork to your desired texture. Season to taste with salt, black pepper, or your choice of seasoning. Toast your bread then spread the mashed avocado on top. Add the egg, cooked to your liking, on top of the avocado and serve.
